Good Barbecue takes patience. Whether it's trimming a brisket, massaging rub into a pork butt or smoking the low n slow method barbecue should not be rushed. Each step is important and builds on the previous step. You will taste the difference in the end product.

Traditional Barbeque with a Modern twist
We serve traditional favorites cooked the old fashioned way, Low n Slow. Pulled Pork, Texas Style Brisket along with more modern offerings like Korean BBQ Tacos, Tex-Mex Brisket Tacos, Spicy Baked Beans, light and fresh coleslaw to name a few. We have developed our original recipes over years of testing. We make our own rubs, barbecue sauces and even our own chili powder.

Our story begins in a backyard many years ago
I grew up in the southwest corner of Oklahoma not far from the Texas border. In Texoma (the area on either side of the two states where the red river runs) beef is king, especially brisket so naturally I was raised on Texas style brisket. After high school I joined the marines which took me away from Oklahoma to a number of other places.
That's when I discovered "barbecue" means different things to different people. I longed to eat the savory smoky brisket I ate in my youth. I grew frustrated that I could not find any thing that could compare. I decided to take matters into my own hands and bought a grill, then a smoker and attempted to recreate the mouth-watering brisket I remembered. I spent numerous hours researching and cooking. After many mistakes and inedible attempts and more than 20 years I have (in my humble opinion) successfully recreated the flavors of my youth.
Over the years as I shared my love of smoking meat and developing recipes for other barbecue styles and sides I kept hearing "Mark, this is so good you could sell it!" and that is how Up in Smoke BBQ & Catering was born. I have a passion for all things barbecue and work hard to get it right every time. Hence our motto "Barbecue done right y'all!
